I love the simplicity of this dish. Along with the blast of flavor. Sausage adds great flavor to just about anything. Putting potatoes and sausage together is really great. The sausage grease helps to cook and crisp the potatoes making them taste so wonderful and have a great texture! Cajun spiced sausage & potatoes are a kid favorite.
We love Old Bay
I think this is the only recipe of mine that actually uses Old Bay in a recipe. My middle son however will put Old Bay on anything! Kinda like some kids use ketchup. If not Old Bay, he will drown it in hot sauce. Yes, I can’t believe it either. I am not very partial to spicy stuff, but when I was pregnant with him, I craved spicy food. It is funny he is the only kid of mine who will really eats spicy foods. I started making my own cajun spice mix. Store bought mixes are expensive and sometimes they contain ingredients I am not fond of. Check out my homemade cajun spice mix.

Cajun Spiced Sausage & Potatoes tutorial:
Only a few steps really, and then you can throw it in the oven!
Second step is to slice up the onions.
Then, slice up the sausage. I like to slice them on the thin side, this helps to make sure you get one in every bite! Plus, when they cook up it is easier to get them crispy!
Next, add the cajun spices and oil. Place your casserole dish in the oven. See full recipe below.
