This is a great Breakfast Burrito Recipe. It is pretty basic though. you can add or take away any ingredients. This can give you an idea of what to put into your burritos.
You may want to add some herbs or spices or maybe sausage (like this recipe)? I actually freeze these, and all I have to do is reheat for breakfast.
I’m all about simple breakfast items, although most of my items are quick, these have to be reheated in the oven for 40 minutes. I prefer to have these on the weekend when there are fewer time constraints!
Breakfast Burrito Recipe
- 4-5 red potatoes (diced)
- 1-2 tbsp coconut oil
- 1 onion (diced)
- 1 green bell pepper (diced)
- salt and pepper to taste
Burrito Filling Ingredients
- 1.5 Lbs. ground beef (cooked and drained)
- 1 dozen large eggs (scrambled)
- 1 can black beans
- 1 cup Monterey jack cheese
- 15-20 small to medium size tortillas.
- Place oil in a large skillet on medium-low heat.
- Sauté the onions and bell pepper together.
- Then add in the potatoes.
- Cook until the potatoes are a little crispy.
- Add a little bit of flour.
- Once crispy enough set them aside.
- Combine all of the ingredients together, except the cheese into one container.
- Place the filling on the tortillas, then add the cheese. Next roll them up. It helps if you use a measuring cup to fill the burritos. They will cook more evenly if they are all the same size. 1/4 cup of filling for small tortillas, 1/2 cup filling for medium tortillas.
To Freeze: Wrap the burritos in tin foil, and freeze. To Reheat: Then turn the oven on to 425ºF and cook them for about 40 minutes turning them after the first 20 minutes. I like to check the temperature just to make sure that they’re fully heated.

Burrito Stuffing Ideas
I’m not one to strictly stick to recipes. I tend to change ingredients, and even increase and decrease amounts! So when it comes to breakfast burritos, you most definitely don’t have to stick to the recipe. f you love bacon, add bacon! Sausage? Oh yeah, add some of that!
If you don’t like beans or just aren’t a huge fan, leave them out! The fun thing about making breakfast burritos is that you can make them your own!
If you plan to freeze them, leave out wet ingredients like condiments, add them after you reheat the burrito!
