These are the easiest enchiladas that you’ll ever make. These Cheese and Onion Enchiladas use my amazing Quick Enchilada Sauce Recipe. Which only takes about 10 minutes to make!

In just a minute I’m going to reveal to you why these enchiladas are so quick to make and so easy. Believe me, these are special and clever!

Featuring The Stacked Cheese and Onion Enchiladas!

Maybe like me, you learned to make rolled enchiladas, it wasn’t until we lived in Texas that I even saw a flat or stacked enchilada. Then it made perfect sense, why roll them when stacking is so much faster and easier.

You know those “Mexican” pizzas, that Taco Bell has/had?… Yeah so, I want you to imagine instead of rolling up tortillas, stacking them on top of each other. Why didn’t we think of this sooner?

It’s funny because one time I went to an authentic Mexican restaurant and I got a tostada and it was flat. Not at all what my Taco Bell eating self expected. Lol. I will say this real Mexican food is so good. That tostada was amazing!

So instead of rolling them up and starting the oven and heating up the entire house, we will be cooking these up in a skillet. In the time it takes to make some grilled cheese, you can make these Cheese and Onion Enchiladas!

Ingredients Needed…For Cheese and Onion Enchiladas

Obviously, this recipe is kept very simple. Cheese, onion, and a tortilla.

However, what cheese should you choose? I like using queso. You can find it around the cheese sticks sometimes. I shred this up and use it in this recipe. Alternatively, you can use any cheese you prefer!

As for onions, I like to use whatever I have on hand. When I buy onions, I buy the ones that look good. Either white or yellow. I can’t seem to find many red onions these days. Are you having the problem too? Maybe I can grow some this year…

Make As Many As You Need

One of the best things about this recipe is that you can make enough for just one person to eat, or enough for an entire family! Just like when you cook grilled cheese, you make enough until everyone is full! I usually stack three on a plate and then hand it out to the hungry hoards.

Cheese and Onion Enchilada Recipe

  1. First, you need to make the Quick Enchilada Sauce…So hop on over there and make that and come back here, when you are done.
  2. Keep the enchilada sauce warm. I like to turn off the heat but keep it on the burner and turn it on low occasionally when it starts to cool.
  3. Next, shred your cheese (if not already) and dice an onion.
  4. Heat another skillet on medium heat.
  5. Dip a tortilla in the enchilada sauce (careful it’s hot!)
  6. Then place it in the heated skillet.
  7. Add cheese and onion.
  8. Then do another layer, dip tortilla, add cheese and onion. Do three layers total.
  9. Remove from the skillet when the cheese is melted.
  10. Serve and enjoy!

The good thing about those enchiladas is that you can freeze the sauce, so even though it takes over an hour to make the sauce, I can also get a few meals out of it.

My three teenage boys love…LOVE…My Beef Enchiladas Recipe. Of course, they do! It’s packed with tons of meat and cheese. What’s not to love?

The kid’s second favorite enchilada that’s super easy to make is the Cheese and Onion Enchiladas. The kids don’t usually know there are onions in it. I like sneaking veggies into foods they love. Shhh…!
