I love easy meals, whether I’m cooking at home or while camping. A warm Chicken Quinoa Soup is perfect for the fall camping weather.
I’ve added directions into the recipe to cook this at home or at camp. It’s two easy recipes in one! For camping you can prepare some dry ingredients and just add water at the campsite and cook over a fire if you like.
Or you can prepare fresh veggies before you leave the house (if you’re taking a cooler). Either way this soup is delicious!
Tips For Making Camp Soup
Combine quinoa, rice, salt, and pepper in a jar. Use water in place of the broth.
Bring the canned beans and a can opener with you. You can choose to bring onions and carrots already cut up but keep them in the cooler. Then, follow the directions.

Chicken Quinoa Soup Recipe
This recipe includes instructions for cooking at home or at camp.
Ingredients
At Home Ingredients
- 3 cups chicken broth
- 2 cups beef broth
- 1 cup quinoa
- 1/2 cup rice
- 1 can black beans
- 1 can cannellini beans
- 4 large carrots (sliced)
- 1 onion (medium)
- salt & pepper to taste
- 1 chicken breast (cooked and shredded or use canned chicken)
Camp Soup Ingredients
- In a mason jar combine the dry ingredients.
- 1/2 cup quinoa
- 1/2 cup rice
- salt and pepper
- 1/2 cup Fire Roasted Vegetable Blend from Mountain House
- 1 can black beans
- 1 can cannellini beans
- Before leaving the house dice 1 onion and 1 carrot and place in a plastic zip bag or plastic container. *optional
- 12 oz canned chicken breast
- 5 cups water
Instructions
- Add all ingredients to a large pan. Including the Fire Roasted Vegetable Blend.
- Bring to a boil.
- Simmer for 20 minutes on low heat, covered, and stirring occasionally.
- Serve and enjoy!
