Are you looking for a way to eat raw kale? Kale by itself is not really tasty. You might be surprised that by adding just a handful of ingredients to kale, can calm down the bitterness and make it taste amazing! This kale salad recipe might just be your next favorite thing!
If you like kale chips, chances are you’ll love this kale salad. The salt, lemon juice, and olive oil really add such a delicious flavor to this kale.
Did you know that kale is a member of the cabbage family? Yep, sure is. It’s also part of a group of vegetables called cruciferous. Other vegetables in this group include, broccoli, cauliflower, collard greens, brussels sprout, and cabbage of course.
There are a few types of kale, if you haven’t noticed. They can range from smooth to curly leaves, and typically is green, but sometimes comes in pretty purple hues.
Why Eat Kale?
A couple of people have told me that I shouldn’t eat kale because it messes with the thyroid or something. The doctors have said in my lifetime that coffee is bad, coffee is good, wine is bad and wine is good. They also said the same thing about eggs and plenty of other food items.
I can’t tell you what’s good my friend. I’m not a doctor or scientists. I can only do what I assume you are trying to do and that’s make an informed decision.
So let’s talk about the nutrition you can get from kale.
- Vitamin A
- Vitamin K
- Vitamin C
- Vitamin B6
- 1/2 lb. kale (chopped, I buy the bagged kale)
- 1/2 lemon
- 1/4 cup olive oil
- 3 radish (sliced very thin *Optional)
- salt to taste
- Place kale in a bowl
- Remove stems if you like (I remove them because some of them are bitter.)
- Using a lemon squeezer, squeeze the lemon juice over the kale.
- Add the radish, olive oil, and salt
- Mix all together really well. I mix with my hands. It seems to be the easiest way to get it done. ENJOY!
