My love for macaroni…
First of all, I decided to make this macaroni salad recipe and realized that I had completely run out of macaroni pasta. Oops! I took pictures anyway, hopefully I can update them next time I make it. 😉 I like macaroni in this recipe a little better. I am not sure why, maybe because the texture is smoother. Good to know that if you don’t have macaroni in the pantry and want to make this recipe, just try a different pasta. 😉

So I have been making this salad for many years, but a few months ago I started to ferment some things. I pickled some carrots using Fermentools! I really had no idea how I would use it in a recipe, until one day I was making the macaroni salad for lunch and reached in the drawer for some fresh carrots and they were all gone. All I had was the pickled carrots. So, I gave it a try!

Since getting my set in the mail, I have basically been fermenting up a storm! I may be getting addicted. I am starting to seriously crave the fermented foods! I put them in the salad, and Boomerang! It was awesomeness! Wow, it doesn’t only add a great flavor but the carrots are still crunchy. Providing exactly what this salad needed! Oh boy I was so excited! It gave me more ideas of how to use my ferments in other salads and things down the road. If you do not want to make pickled carrots, then feel free to use your fresh carrots!
Macaroni salad recipe:

- 1/2 lb Macaroni Pasta, or whatever you have (ahem, lol)
- 1/2 cup Mayo
- 1 Tbsp Mustard
- 1/2 cup pickled carrots or just plain carrots, sliced
- 1/2 cup Celery sliced
- pinch of Pepper
- pinch of Salt
- pinch of Garlic powder
- Cook macaroni according to directions.
- Cool pasta by running cool water over it while in the strainer, and drain off an excess water.
- Place macaroni in a bowl.
- Add all the ingredients into the bowl.
- Mix it up well, and serve!
I love simple little salads like this. I love that it is simple easy and cheap to make the pickled carrots with Fermentools. It only take a couple of minutes! So worth the wealth of health that is provides to my body!
Pair this with a sandwich for lunch. Or with some chops at dinner time.
