We all need great leftover Thanksgiving recipes. This is my favorite, because peanut butter adds the most amazing flavor to leftover turkey.
Many leftover recipes tend to be little bland and this one is an amazing blend of spicy, sweet and savory!
Peanut Butter Turkey Satay
Use up your leftover Thanksgiving turkey by making turkey satay! This recipe is sweet, savory, and spicy. The flavors will wow everyone!
Ingredients
Marinade Ingredients
- 3 lb. turkey breast steaks (cooked, sliced)
- 2 inch fresh ginger (peeled and sliced)
- 4 cloves garlic
- 2 tsp cayenne pepper
- 2 tsp lime juice
- 2 tbsp soy sauce
- 1/3 cup coconut milk
- 2 tbsp peanut butter (creamy, use your favorite brand)
Peanut Butter Sauce Ingredients
- 1 cup peanut butter (creamy, use your favorite brand)
- 2 cloves garlic
- 1 tbsp brown sugar
- 1/2 tsp tamarind paste or lime juice
- 1 tsp cayenne pepper
- 1/3 cup coconut milk
- 2 tsp sesame oil
- 1/2 tsp soy sauce
- 1/3 cup water
Instructions
Marinade Instructions
- Add all ingredients to a blender or food processor
- Blend well for about 30 seconds
- Pour marinade into a shallow dish
- Add turkey to marinade. Set aside leftover marinade to use for basting while grilling.
- Marinate for up to 6 hours, be sure to turn and marinate the other side too.
- Grill on high heat for 1-3 minutes or until it's browned
- Turn and brown the other side
- Baste side up with leftover marinade
- Remove from heat
Peanut Butter Dipping Sauce
- Add all ingredients to a blender
- Blender for 30 seconds to 1 minute
- Add to a small bowl for easy dipping
- Serve and enjoy!

Do you think I can recreate this recipe, without having to roast it for several hours? I would love to add it to my regular weeknight dinner menu. My family seriously loved it. No problem with leftover turkey going bad, it all got eaten!

You can recreate this recipe. Most people actually make turkey satay using turkey breast tenderloins, and they usually marinate them, skewer them, and then they can be grilled. Hope that helps! Let me know if you have more questions!
